Last week our Level 2 Catering students undertook their 3 hour mock practical assessment over 2 sessions, whereby they followed a prepared time plan, cooked and presented 2 dishes to restaurant standard.
The remit was to produce either a nutritional and skilled starter and main, or main and dessert, which would be suitable to serve in the fictional ‘Western Avenue Deli’. As is often the case with these high-pressured practical assessments, the students really rise to the challenge and work so hard to produce some lovely dishes. The mock also serves to demonstrate how being organised and prepared helps ensure a successful outcome.
